Fattoush - Lebanese Bread Salad

This salad combines the best of all herbs and my favourite thing - bread!

Ingredients:

  • 1 round Lebanese bread
  • 6 radishes, cut in half and sliced
  • 2 Lebanese Cucumbers, slice in half lengthways and slice
  • 3 Firm and ripe tomatoes, dice
  • 10 spring onions, chopped 
  • 1 cup watercress
  • 1 cup parsley leaves
  • 1 cup mint leaves
  • 1/2 teaspoon all spice
  • 2 teaspoons sumac (Lebanese spice, made from berries, sour and fruity taste)
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 100ml lemon juice
  • 100ml olive oil

Method:

  1. Pre-heat oven to 180 degrees
  2. Split the bread in half and put on oven tray for about 4-5 minutes or until golden brown and crispy. Leave to cool and break into chunky pieces.  Alternatively, you can deep fry the bread and leave to cool and break up
  3. Combine all the vegetables and herbs in a bowl.  Mix together the spices, salt, pepper, lemon juice,olive oil and pour over salad, toss gently and combine. Serve immediately with bread on the side (you can add it directly and toss however if not eaten immediately it will soften)
