Ingredients
- I cup sugar
- 75g butter
- 2 eggs
- 3-4 mashed bananas
- 1/2 cup water
- 1 2/3 cup flour
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 - 1 cup walnuts (Optional)
Methods
- Preheat oven to 180 degrees
- Grease a bread tin or line with greaseproof paper
- Mix butter and sugar in a medium bowl
- Beat in the eggs
- Add banana and water and beat for 30 seconds
- Sift in dry ingredients and fold until well combined
- Fold in walnuts (Optional)
- Scrap the mixture into the baking tin
- Bake for 1 hour and 10 minutes or until a skewer inserted in the centre comes out clean
- Leave to cool in the baking tin for 15 minutes then turn onto a cake rack and remove the baking paper
- Serve in slices, spread with butter
