Banana Bread

Ingredients

  • I cup sugar
  • 75g butter
  • 2 eggs
  • 3-4 mashed bananas
  • 1/2 cup water
  • 1 2/3 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 - 1 cup walnuts (Optional)

Methods

  1. Preheat oven to 180 degrees
  2. Grease a bread tin or line with greaseproof paper
  3. Mix butter and sugar in a medium bowl
  4. Beat in the eggs
  5. Add banana and water and beat for 30 seconds
  6. Sift in dry ingredients and fold until well combined
  7. Fold in walnuts (Optional)
  8. Scrap the mixture into the baking tin
  9. Bake for 1 hour and 10 minutes or until a skewer inserted in the centre comes out clean
  10. Leave to cool in the baking tin for 15 minutes then turn onto a cake rack and remove the baking paper
  11. Serve in slices, spread with butter
